Pesto Sweet Potatos
Ingredients
2 medium sweet potatoesÂ
1/2 jar of pesto (bought or homemade)Â
Splash of extra virgin olive oilÂ
Pinch of pink himalayan saltÂ
Serves 2
50 Minutes
Preparation
Preheat the oven to 180°c.
Cut the sweet potatoes in half, add some criss cross marks to the top, add a little extra virgin olive oil and a pinch of pink himalayan salt.
Roast for around 45 minutes or until tender (depending on the size of them) then top with pesto and serve.Â
